Other recipes Not pictured:

Chicken tortilla soup: I use basically this recipe, except I add in a lot more chopped red, orange and yellow peppers and add them in after I brown the onion and garlic. And, I skip the can of tomatoes.

Homemade Taco Seasoning: I don’t buy taco seasoning; I make my own. You can even make up a bunch and then use a couple of T’s when you cook.

1 tablespoon chili powder

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

1/4 teaspoon crushed red pepper flakes

1/4 teaspoon dried oregano

1/2 teaspoon paprika

1 1/2 teaspoons ground cumin

1 teaspoon sea salt

1 teaspoon black pepper

Homemade chili seasoning: similar to Taco seasoning, but I use this when I make a crockpot of chili

1 Tbsp chili powder

1 tsp ground cumin

1/4 tsp cayenne pepper

1/4 tsp garlic powder

1/2 tsp onion powder

1 tsp salt

1/4 tsp approximately freshly ground pepper

 Chili recipe:

In a crock pot on low, add the following ingredients, plus whatever you like to add

2 large cans of chili beans- I prefer Mrs. Grimes

1 can black beans

2 cans of diced tomatoes- I like the garlic ones or the fire blackened. You can do whichever you like or mix and match

Chili seasoning from above

1 lb browned hamburger

Cook all day in the crock on low 😊

Baja Salads:

  • Salad mix in the bottom of the bowl
  • Top with leftover chili
  • Sliced avocado
  • Salsa
  • Shredded cheddar cheese
  • Tomatoes
  • Eat with spicy ranch dressing or plain

Chicken Tenders:

I cut up chicken breasts into thin strips and dredge in Italian seasoning. Place them on a greased cookie sheet and cook at 350 for 20-25 minutes.

Summer Squash Chips:

Slice summer squash into thin disks. Dredge them in a bowl with 2 eggs wisked together, then dredge them in Panko bread crumbs. Place them on a greased cookie sheet, sprinkle well with sea salt, and bake at 350 for 20 minutes.

Loaded Baked Potato Soup:

**Any roasted veggies, I just toss with olive oil, sea salt, and roast at 350 for 15-20 minutes on greased cookie sheet.

**Fries are just sliced up potatoes on greased cookie sheets with olive oil and baked at 400 for 30 min.
